Open thread: Simple sustenance

The citizens of Japan are on my mind today. If you want to donate to disaster relief efforts through the Red Cross, visit Redcross.org to learn how. Or you can text “REDCROSS” to 90999 to donate $10, which will be added to your cell phone bill. Also this article in Time magazine details other organizations working to help people.

The people of Japan need the basics. With USDA rules and regulations governing school lunch and FDA monitoring our country’s food supply, it’s easy to forget that food is supposed to be simple. In times of need, I am reminded of that fact.

What are the foods you eat during times of crisis? Which staples do you turn to for simple nourishment?

  1. I love chicken broth. One of my favorite things to make with it is a crock pot chicken noodle soup recipe my mom taught me, with egg noodles, cut up chicken breast pieces, celery, onion, carrots and the right mix of spices to make your mouth water as soon as you walk in the door from a cold, miserable day.

Super easy to make, super cheap, and I often have most of the ingredients on hand. It's also a pretty easily alterable recipe if I happen to be missing a veggie. My mom also suggested trying strips of cabbage in lieu of the noodles. I have yet to try it myself, but I bet it's tasty!
